Like Lowell, I haven't eaten red meat for awhile...but, this looks tasty. I'm not so sure about the wild boar pate. It could be a bit exotic for me. By the way, I like that you've been branching out recently with your subject matter.

Charolais is also a very popular breed in Virginia--or at least it was. Remember being chased by a Charolais bull on one of my runs. :-)
